and the French. Since the 15th century, many
people have enjoyed the taste of nougat and
Flying Swan takes great delight in introducing
this delicious treat to people living worldwide.

Flying Swan Nougat is hand-made using all natural
Australian ingredients according to traditional
European methods. The dedication and time involved
in making nougat by hand in small batches, ensures
that the finished product is guaranteed to be
of a consistent quality.
First all the ingredients are weighed into
the various bowls, then we beat the egg whites
up into a delicate frappe’. Next the Almonds
are placed into the dry roaster, and the roasting
process is started.
Then the process involves using handcrafted
copper pots in which a hot mixture of honey,
glucose syrup and sugar is prepared by blending
and then heating. The Nougat is prepared by
folding the heated syrup into the aerated ‘frappe’
,in the presence of heat to form a nougat mixture.
This delicious mixture is then carefully mixed
for a very long time to reach the desired delicate
texture and to enhance the taste of the nougat.
Then the other ingredients and the highest quality
natural vanilla are added to the nougat mixture.
The nougat is then wrapped in edible wafer
paper before being carefully cut to size, and
checked for quality and shape, before the pieces
are individually wrapped. The individually wrapped
pieces are then packed into plastic bags and/or
cardboard boxes, ready for sale.

While the stories regarding the origin of nougat
vary there is no doubt that Flying Swan is combining
the traditional cooking and preparation methods
from France, Italy and wider Europe, together
with the highest quality ingredients grown in
the clean Australian countryside.
One of the most commonly believed, and nicest
stories, is that the name nougat evolved from
France where an elderly lady combined almonds,
egg whites, honey and sugar as a treat for local
children. As the first nougat maker the children
began to call her “Tante Manon, tu nous
gates” (meaning Aunt Manon, you spoil
us) and hence the word nougat is said to have
first originated from this name.
While the French believe nougat first originated
in 1650 when the almond tree was introduced
to the Montelimar area it is probable that nougat
has been around far longer although carrying
a different name. It seems nougat has been around
for more than 500 years in the Middle East and
probably paralleled the development of marzipan
and other delicious desserts.
Even before the birth of Christ the Greeks
were praising the gastronomic value of a mixture
made with almonds and honey. It has taken a
little longer to find its way to Australia,
but now that it has, Flying Swan has adopted
the same tradition and standards that have been
applied to nougat making that made it so popular
throughout Europe.

Crunchy Almond
Nougat
A crunchy texture in the traditional style
that the Italians call “Torrone”,
this taste sensation is full of freshly
roasted almonds. Traditional crunchy Nougat
was made in big slabs and broken with
a hammer before being passed around the
table. Flying Swan has removed the need
for a hammer by cutting and wrapping the
Nougat into individual bite-sized pieces. |

with less sugar and lots of freshly dry-roasted
almonds so it is healthier and not too
